The purpose of this research was to investigate the factors affecting local food preferences of residents of Trat Province. The mixed methods approaches of quantitative and qualitative research methods were used. A Sample group of 383 residents of Muang District and Klong Yai District responded to a questionnaire for the quantitative portion of the research. In-depth interviews with food experts were conducted for the qualitative portion of the research. The results showed that the popularity of fruits, meat dishes and desserts was at the moderate level. The highest rated fruits were: rambutan, mangosteen and durian. The highest rated meat dishes were: Sean Tung Red Curry, Spicy Mixed Vegetable Soup, and Pork Curry with Garcinia Cowa Leaves. The highest rated deserts were: Sweet Sticky Rice with Mango, Mung Bean Thai Custard, and Sweet Sticky Rice with Coconut Filling.
