Development of production process of dried raw oyster cracker on oyster cycle Kung Krabaen Grouq, Kung Krabaen Bay Royal Development Study Center, Tha Mai, Chanthaburi Province
The objectives of this research are to study the factors and conditions that are suitable for the production of dried raw oyster crackers, and to compare the efficiency and costs of the production by utilizing the hot-air oven, and sun-dried method. The study has used the hot-air oven with trays which used electricity and fuel at temperature of 50o C, 60o C, and 70o C for 6 hours.
